April Showers Bring May Fiestas!

May is here, the weather is warming up, and if that’s not enough reason to celebrate, Cinco de Mayo is this week!

Why do we celebrate Cinco de Mayo anyway? A common misconception is that the holiday is a celebration of Mexican independence. However, Cinco de Mayo is actually a celebration of Mexican victory in the Battle of Puebla in 1862.

Today, Cinco de Mayo has evolved into a celebration of Mexican culture that is observed across the US, as well as Mexico.

To celebrate, we’re sharing a fun- and fruit-filled Mexican dessert recipe that the whole family will love!

Sopapillas with Fruit Topping

 

Homemade Sopapillas (from Gimme Some Oven)
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon fine sea salt
2 tablespoon coconut oil or butter
3/4 cup warm water
Oil (for frying)
Powdered sugar or cinnamon sugar (for topping)

Option 2 – Puff Pastry Sopapillas
If homemade isn’t really your style, use puff pastry! Unroll it, cut into squares, bake for 12-15 minutes on 400F, and coat with sugar while hot.

Fruit Compote (from Cookie + Kate)
If you’re really in the spring spirit, top your fresh sopapillas with easy homemade fruit compote! There’s no better way to enjoy the delightful fruits coming into season this month including strawberries, apricots, cherries, and pineapple! All you need for compote is:

1 pound of fresh fruit of choice
2 tablespoons honey or maple syrup
Dash of salt
